This summer we have a vegetable garden and as a result we have a lot of zucchini. Anybody out there have any special recipes they would like to share that don’t evolve masks of the Olsen twins or Will Arnett?

I can’t believe nobody’s made a lewd joke yet. I expected better from you, newspeak readers! Or maybe I just need to get my mind out of the gutter and stop having the sense of humor of an 11-year-old boy.
I don’t know about lewd, but I can make a few nerd-related, inside-joke comments:
“Nothing Can Defeat the Zucchini!”
and
“Hey, Zagros! Look who thinks he’s a Centaur, too.”
Oh, and I recommend slicing the zucchini thinly, then saute in butter with fresh dill and cumin seed.
how about a nice zucchini bread, yum.

Here’s the recipe my mom uses:
2 cups washed and trimmed Zucchini
1 cup Walnuts
2 cups Sugar
3 cups Flour
3 Eggs
1 Cup Canola Oil
1 tbsp Vanilla
2 tsp Cinamon
1 tsp Salt
1 tsp baking soda
1 tsp baking powder
Blend Zucchini
Beat eggs until foamy, stir in Vanilla
Gradually beat in oil and sugar
Add Zucchini, and dry ingredients (except flour) … mix well.
Add flour, and fold in chopped walnuts.
Pour into greased and floured loaf pans.
Bake at 350ยบ for one hour, or until inserted toothpick comes out clean. YUM.
Don, you better wash and trim that sucker.
